Loaded Veggie Quiche


This super easy, healthy breakfast is our go-to. I make a batch on the weekend, and it lasts us through the week! 

Ingredients:

12 eggs

1 Bag of frozen shredded potatoes

1 Red Pepper, chopped

1 Green Pepper, chopped

1 Yellow or Orange Pepper, chopped

1 Yellow Onion, diced

Salt & Pepper

1 tbsp Garlic

1/2 cup shredded cheese

1 cup cubed ham (optional)

1/2 cup Nonfat Milk

 

Directions:

Pre-heat oven to 350 degrees.

Spray a 9x13 pan with vegetable or grapeseed oil, set aside.

In a bowl, combine frozen shredded potatoes, cheese, and ham if you're adding that, and spread evenly into the prepared pan.

Add chopped onions and pepper to the pan on top of the potatoes, cheese, and ham mixture.

In the same bowl you used for the potatoes, cheese, and ham, whisk  12 eggs, 1/2 cup of Nonfat milk, garlic, and salt and pepper. Pour into pan evenly.

Bake for 30-45 minutes and enjoy!
