Loaded Veggie Quiche

This super easy, healthy breakfast is our go-to. I make a batch on the weekend, and it lasts us through the week!  Ingredients: 12 eggs 1 Bag of frozen shredded potatoes 1 Red Pepper, chopped 1 Green Pepper, chopped 1 Yellow or Orange Pepper, chopped 1 Yellow Onion, diced Salt & Pepper 1 tbsp Garlic 1/2 cup shredded cheese 1 cup cubed ham (optional) 1/2 cup Nonfat Milk   Directions: Pre-heat oven to 350 degrees. Spray a 9x13 pan with vegetable or grapeseed oil, set aside. In a bowl, combine frozen shredded potatoes, cheese, and ham if you're adding that, and spread evenly into the prepared pan.
